&lt;p&gt;2 lbs frozen hashbrowns (cubed or shredded)&lt;/p&gt;
&lt;p&gt;1 cup shredded cheddar&lt;/p&gt;
&lt;p&gt;1 cup sour cream&lt;/p&gt;
&lt;p&gt;1 can gluten-free cream of chicken soup (make sure its gf, i believe health valley makes one that is)&lt;/p&gt;
&lt;p&gt;1 stick melted butter&lt;/p&gt;
&lt;p&gt;½ cup gluten-free cornflake crumbs&lt;/p&gt;
&lt;p&gt;½ stick melted butter&lt;/p&gt;
&lt;p&gt;1. In a large bowl, mix hashbrowns, cheese, sour cream, soup, and one stick of melted butter.&lt;/p&gt;
&lt;p&gt;2. Add to a 9 x 12 baking pan and top with mixture of cornflakes and remaining melted butter.&lt;/p&gt;
&lt;p&gt;3. &lt;p&gt;This looks so good. I have been craving strawberry shortcake for a while now, and this one sounds pretty easy to make. The nice thing about Bisquick’s GF mix is unlike most other pre-made mixes it does not include nuts. Unfortunately my wonderful immune-suppressing medication has made be susceptible to new allergies, or possible old ones that were just never a big deal before. One of the things I’ve been trying to avoid are tree nuts, and almonds are in EVERYTHING gluten-free. Ok, not everything, but many of the things that make it easier to bake. I actually may not even be allowed to have this either, as last time I ate something at a restaurant with strawberries my lips and tongue went numb, but that could have been whatever chemicals im sure the berry was doused in and not the berry itself. &lt;p&gt;Me! I &amp;#8220;stole&amp;#8221; this recipe from my grandpa. He is from the Abruzzi/Abruzzo region of Italy, so clearly he makes some mean Italian food. The only problem, as I may have mentioned before, is that he rarely writes down or uses exact measurements so you have to really watch him cook to learn how to make things. I spent half a day in his basement watching him make over one hundred ravioli for Christmas day, which was pretty necessary because rolling pasta is not as easy at it sounds.&lt;/p&gt;
&lt;p&gt;ANYWAYS, enough rambling, here is the gluten-free version of his meatball recipe&amp;#8230;&lt;/p&gt;


2 lbs ground beef (or a mix of ground beef and pork, just don&amp;#8217;t use anything too lean)
&lt;p&gt;between 1/8 - 1/4 cup milk&lt;/p&gt;
&lt;p&gt;1 egg, beaten&lt;/p&gt;
&lt;p&gt;1/4 cup gluten free bread crumbs or crushed rice cakes&lt;/p&gt;
&lt;p&gt;2 tsp salt&lt;/p&gt;
&lt;p&gt;1 tbsp parsley&lt;/p&gt;
&lt;p&gt;½ tsp oregano&lt;/p&gt;
&lt;p&gt;½ tbsp onion powder&lt;/p&gt;
&lt;p&gt;½ tsp basil&lt;/p&gt;
&lt;p&gt;½ tsp celery seed&lt;/p&gt;
&lt;p&gt;1 tsp pepper&lt;/p&gt;
&lt;p&gt;¼ cup parmesan&lt;/p&gt;

&lt;p&gt;1. In a mixing bowl, combine all dry ingredients (spices, cheese, breadcrumbs.) Add milk and egg, stir everything together.&lt;/p&gt;
&lt;p&gt;2. Mix in beef until all ingredients are thoroughly combined. Cover and let sit for 10- 15 minutes.&lt;/p&gt;
&lt;p&gt;3. To form meatballs- roll or pat gently, don&amp;#8217;t press too hard or meatballs will end up tough. I usually make mine a little bigger than a golf ball, but size doesn&amp;#8217;t matter much ;)&lt;/p&gt;
&lt;p&gt;4.
